Artichoke Squares

I went to a wine tasting on Saturday night in Medford at my friend A & K's, and about 30 of us tasted some great white wines.  It turned out to be more than a wine tasting!  It was also a surprise proposal!  Good job K on surprising all of us, including A!

A bunch of us brought food, and I brought my Artichoke Squares.  I thought you might like to see how they came out, and I'll share the recipe.

Artichoke Squares



1 can artichokes in water
1 clove garlic, minced
1 small onion, chopped
1 or 2 marinated red peppers
4 eggs
4 ounces cheddar cheese, shredded
1/2 tsp. Italian Seasoning (or parsley, oregano, basil)
1/4 c. dry bread crumbs
1/4 tsp. salt
1/8 tsp. pepper
1/4 tsp. chili powder (or to taste)

Preheat oven to 325. Drain juice from the can of artichokes and place 1/2 in saute pan. Saute garlic and onions in the juice. Chop the can of artichokes and the red pepper and set aside. In a bowl, beat eggs .  Then add artichokes, peppers, extra artichoke juice, 1/2 of the cheddar cheese and all other ingredients. Pour into greased 9x13 pan and bake for 25.  For last 5 minutes, add the rest of cheddar cheese and cook.  If not browned, you can put under the broiler for a just a few minutes (no more than 5!)  Cut into small squares.
