Cool Mango Mint Chicken Salad!

As I mentioned, I have been enjoying all the fresh fruit coming up available in this early summer!  Whole Foods had a sale on their mangos (5 for $5), and I was a sucker.  I bought 5, and had to keep myself from putting them all in this salad!

This is a one, one, one, recipe, and it makes about 4 servings!


One of each:
Apple (chopped)
Cucumber (peeled)
Mango (peeled)
Avocado
Chicken Breast (pre-cooked and shredded)
1 Tbsp of Fresh Chopped Ginger
1 Tbsp of Fresh Chopped Mint
3 Tbsp of Apple Cider Vinegar
At least 1 Tbsp of Lime Juice, but I used a whole lime's worth!

Peel and chop the mango and cucumber roughly into 1/2 to 1-inch pieces, and mix together in a bowl.


 Add the fresh ginger, chicken and mint into the bowl.

Then add the avocado, sliced and then cut into quarters. Then add the chopped apple. Quickly move to the next step...

Add the vinegar, fresh squeezed lime juice and toss together well!



It makes 4 1-cup servings, and it is even better after a couple of hours in the refrigerator.  The cool crispness of the apple, the tart of the lime juice, and freshness of the mint really bring this dish together.  I had it for both lunch and dinner last week as a quick cool meal on these hot days!
